Grilled Pineapple


Back on Memorial day our friends invited us over for a BBQ. We had our your typical fare, and then there was this pineapple. Bill and I immediately knew we needed to go home and add this one to our BBQ repertoire. It's pretty simple, and oh, so, amazing! Just like everything I try to share here. I really get excited about food :)

Grilled Pineapple
1 pineapple, cut into spears
2 cups brown sugar
about 1 1/2 Tbl cinnamon (this is the key to the yumminess)

You start by preparing you pineapple and cutting it into spears. I think we usually get about 12 out of one pineapple.

In a separate bowl, combine sugar and 1/2 Tbl of cinnamon at a time. I actually have never measured this, I just did it too taste (the dozen times we have made it since memorial day!). One time I did too much cinnamon and then had to add a ton more sugar to even it out. Now I have a large tub of cinnamon sugar for the next time in my pantry. Make sure you add enough cinnamon though, so you can taste it.

Now for the fun part! Lay out all your pineapple in a 9x13 dish, or cookie sheet, or any large pan. Using your hands, rub the cinnamon sugar mixture into all sides of the pineapple. Be generous and get messy, it will be worth it. If you have any sugar left at the end, sprinkle it on top. Cover the tray and let it sit for about 30 minutes. Then go preheat your grill to medium heat.

After 30 minutes, place pineapple directly on grill. Turn them every few minutes until they are cooked to your liking. Don't be surprised when you eat the entire pineapple in one sitting! Enjoy!
