Banana Bread Pancakes

I feel like I always have rotten bananas sitting on my counter. My kids eat them all the time, but when they reach a certain point no one will touch them, including myself. So instead I buy new green ones and let the old ones keep sitting. Finally when I have a free minute I make banana bread and then it usually goes into the freezer. Well we have gotten pretty tired of banana bread, so when I saw the three extremely over ripe bananas on my counter yesterday, I knew it was time for a new recipe. This is what I found, and this is now our new favorite pancake recipe. It was so delicious! Then my husband had the genius idea to spread strawberry freezer jam on the pancakes. It was a perfect combination. Enjoy!


Banana Bread Pancakes
 2 cups of bread flour (I used regular flour and it was think, so I added extra milk)
2 tsp baking soda
1/4 tsp salt
1 Tbl brown sugar
1/3 cup white sugar
1 tsp cinnamon
3/4 cup buttermilk
1 Tbl vanilla
2-3 large ripe bananas, mashed
2 Tbl melted butter

In a large bowl, combine flour, baking soda, salt, brown sugar, white sugar and cinnamon and stir to evenly combine dry ingredients. Add buttermilk and vanilla to dry  ingredients and stir until combined. Add in mashed bananas and mix to evenly incorporate. Add butter and stir until smooth.

Heat griddle to medium heat. Spray griddle with cooking spray and pour pancakes onto griddle (about 1/4 cup). Cook about 2 minutes or until pancakes starts to bubble, then flip to other side and cook until other side is golden.

Serve with Strawberry Freezer Jam
