Banana-Nutella Muffins

So I have never had Nutella in my life. It always sounded a bit strange to me. If I bought it, what was I supposed to do with it? Well a few weeks ago I came across a recipe in a magazine and it sounded good to me, so I bought me some Nutella. What we ended up with was a pan of muffins finished off at breakfast! Pretty crazy. My boys don't do that, especially when we are experimenting on Muffin Monday. So go ahead, and try these guys out, especially if you have rotting bananas on your counter like I usually do!


Banana-Nutella Muffins
1 cup flour
1 cup whole-wheat flour
2 tsp baking powder
1/2 tsp salt
1 stick butter, at room temp.
3/4 cup sugar
2 eggs
3 very ripe bananas, peeled and mashed (about 1 1/2 cups)
1 tsp vanilla
2/3 cup chopped walnuts or pecans (I always used pecans when given the option)
1/4 cup Nutella

Preheat oven to  350. Line a 12 cup muffin tin with paper liners or coat with cooking spray. In a bowl, combine flours, baking powder and salt. In another bowl, using an electric mixer on medium high speed, beat butter and sugar until light, about 3 minutes. Beat in eggs, bananas and vanilla until smooth. Gradually stir in flour mixture. Fold in nuts.
Divide batter among muffin cups. Spoon 1 tsp Nutella on top of each cup. Swirl together Nutella and batter with a toothpick.
Bake until muffins are golden, about 22 minutes, invert onto wire rack, turn muffins right side up and let cool completely.
