Orange Sour Cream Muffins

It's Muffin Monday today and this is the new recipe we tried. It's pretty amazing. If you have some oranges sitting around, mix these up. I think they would be great for a brunch or maybe a baby or bridal shower. So light and yummy.


Orange Sour Cream Muffins
1 3/4 cup flour
2/3 cup sugar
1 Tbl baking powder
1/2 tsp salt
1/2 cup butter, melted
1 cup sour cream
1 egg
1/4 cup freshly squeezed orange juice (for me it took 1 orange)
zest of 1 orange

Zesty Orange Glaze
1 1/2 cups powered sugar
1/4 cup freshly squeezed orange juice
2 tsp orange zest

Preheat oven to 400 degrees. Line a 12 cup standard muffin tin with paper liners; set aside. In a large bowl, combine flour, sugar, baking powder and salt. Set aside.
In a separate bowl whisk together butter, sour cream, egg, orange juice and orange zest. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
Scoop the batter evenly into the muffin tray. Place into oven and bake for 16-18 minutes.
To make the glaze, combine powder sugar, orange juice and orange zest. Whisk until smooth. If the glaze is too thin, add more sugar as needed.
When the muffins are done, cool for 10 minutes and dip the muffin crown into the glaze. Allow glaze to set before serving.
**My boys are really sensitive to strong flavors, so I made a vanilla glaze instead of the orange one. I replaced the juice with milk and added a dash of vanilla extract**
