I discovered this recipe a week ago and have wanted them ever since. I finally had time to make them today after church. The boys loved them. I hope you do too.
Creamy Chicken Enchiladas
1/2 cup butter
1/2 cup onion
1 4oz can diced green chilis
1 8oz pkg cream cheese
1 8oz bag Mexican style shredded cheese
1/4 cup salsa
2 cups shredded chicken breasts
1 cup red enchilada sauce
1/2 cup whipping cream
Flour Tortillas
In a frying pan melt butter and saute the onions and green chilies. Over mediium heat mix in cream cheese, 1/2 cup cheese and salsa. Once the cheese is melted, mix in the chicken.
Place about 3 large spoonfulls of filling in a flour tortilla. Sprinkle with the cheese (leave some to be left to sprinkle on top at the end) Roll tortilla up and place in 9x13 pan.
Mix together red enchilada sauce and heavy whipping cream. Then pour the sauce over the enchiladas. Cover with remaining shredded cheese and place foil over pan. Bake at 350 for 20 minutes. Then bake 10 minutes more uncovered. Take it out when it's nice and bubbly.
