Lucky Rainbow Chex Mix

I came across this recipe on Pinterest. I had half a bag of Marshmallow Mateys no one was eating and thought the recipe would make a great after school snack. I have to admit, I wasn't planning on eating it. After seeing the kids chow down on it though, I decided to have a taste. I was surprised. It was pretty good. I ate my fair share of it. The boys plan on requesting it again.

The recipe called for an entire box of cereal. I had half a jumbo bag. I measured out about 7 cups of the cereal onto the tray. I also didn't have white vanilla chips. I did have 6 squares of Almond bark. I thought it would be enough. And who measures sprinkles? I just sprinkled the jar around until it looked good. Feel free to make any adjustments you want!


Lucky Rainbow Chex Mix


1 box (11.5 oz) Lucky Charm cereal

6 cups Rice Chex Cereal
2 bags (12 oz) white Vanilla baking chips (4 cups)
1/4 cup candy sprinkles

Directions


Pour box of cereal out onto a large tray. Pick out all the marshmallows (about 2 cups); set aside to add to the mix later. Measure 2 cups of the remaining Lucky Charms cereal (without the marshmallows) into large bowl, add Chex cereal.


Line cookie sheet with foil or waxed paper. In medium microwavable bowl, microwave white vanilla baking chips uncovered in 30 second increments until melted. Stir in between each round. Pour over cereal mixture in large bowl; toss to evenly coat.


Spread mixture in single layer on cookie sheet. Immediately sprinkle with candy sprinkles. Let stand until set, about 20 minutes. Gently break up mixture; toss in reserved marshmallows. Store in airtight container -or leave it in the bowl on the counter until it gets eaten :)
